8 Ways to Upgrade Avocado Toast

Avocado toast might be the most talked about open-faced sandwich ever to grace social media and cafe chalkboard menus. This pricey toast is just as easy to recreate at home with all the same health benefits for a fraction of the cost.

Creamy avocados are low in carbs but contain good-for-you fiber and plenty of healthy fats. Their mild flavor makes them the perfect canvas for a hearty, filling snack or light lunch. Here are a few of our favorite flavor hacks to up your avocado toast game.

Put an egg on it.

Need a boost of protein? Add some jammy, soft-boiled egg slices, drizzle with your best olive oil and sprinkle with red pepper flakes and flaky salt. Look here for a reliable method to achieve a perfect, soft-boiled center.

Add roasted vegetables.

Leftover roasted (or grilled) vegetables like broccoli, asparagus, and zucchini can be chopped and piled on top of mashed avocado for a nutrition boost. Grate a shower of lemon zest over the top to add a bright pop of citrus.

Go Southwestern style.

Give your avo toast a Southwestern spin by adding some crumbled feta or Cotija cheese and a few dashes of your favorite hot sauce or salsa.  Bonus toppings like chopped cilantro or pickled jalapeños to add heat, brightness, and texture.

Slide on a slice of bacon.

There are few things that a little crispy bacon or Prosciutto won’t make better, and avocado toast is no exception. Add a slice of juicy tomato and a dollop of aioli for this toast-y take on the classic BLT.

Top it with smoked salmon.

Avocado stands in for the cream cheese schmear in this American deli breakfast staple. Feeling ambitious?  Swap in rye bread for the bagel in this version and top with some briny capers and chopped fresh dill.

Experiment with spice blends.

If you are short on time, look no further than your pantry for a quick flavor boost.  Simple spices like red pepper flakes and sumac or exotic blends like Furikake, Harissa, and Everything Bagel seasoning can add texture and spice with just a simple shake.

Sprinkle on fresh herbs and sprouts.

Got some herb bunches languishing in the crisper drawer? You can turn them into a quick salad to top your toast. Chop up tender herbs like parsley, chives, dill, and cilantro and give a quick toss with a drizzle of olive oil, lemon juice, sea salt, and cracked black pepper. Pile the “salad” on top of the avocado and top with fresh sprouts for an easy and flavor-packed upgrade.

Fancy it up with seafood.

Sautéed shrimp or cooked lump crab meat add a coastal bend to this toast that can go from lunch to dinner party.  Feel free to swap in your favorite gluten-free crackers for a healthy, time-saving alternative.
