$5 30-Minute Meals – Vegan Sweet Potato and Black Bean Tacos

One of the many benefits of a vegan diet is the lower cost of plant-based proteins. In addition, plant proteins are often quick to prepare and don’t require long, slow cooking times like many animal proteins. We set out to prepare a nutritious, vegan meal in 30 minutes or less, all costing less than $5.

Sweet Potato and Black Bean Tacos

These tacos are an excellent source of vegan protein and fiber. They can be made as a quick dinner or as a veggie option for taco night.

Vegan Sweet Potato and Black Bean Tacos’ Cast of Ingredients

Makes 4 servings

  • 1/2 pound sweet potatoes – $0.99
  • 1 medium onion – $0.49
  • 2 cloves garlic – $0.20
  • 1 can black beans – $0.89
  • 3 tbsp chopped cilantro – $0.50
  • corn tortillas – $1.49
  • 1 lime (optional) – $0.29
  • 1 avocado (optional) – $1.29

Oil and Seasonings ($0.50)

  • 5 tbsp olive oil
  • 1/4 tsp salt
  • 3/4 tsp ground black pepper
  • 1/4 tsp paprika
  • 1/4 tsp ground cumin

Step 1 – Prep Ingredients

Preheat oven to 400 degrees F. Peel and chop onion to a small dice. Peel sweet potatoes and cut into 1/2-inch cubes.

Step 2 – Roast Sweet Potatoes

Arrange cut sweet potatoes on a baking sheet. Toss with 3 tbsp olive oil, 1/8 tsp salt, 1/8 tsp pepper and 1/4 tsp paprika. Roast for 25 minutes, tossing halfway through.

Step 3 – Sauté Onion and Garlic

Sauté onion in 2 tbsp olive oil over medium heat with 1/8 tsp salt, 1/4 tsp black pepper, and 1/4 tsp cumin. Once translucent, add 2 cloves chopped garlic and saute until fragrant.

Step 4 – Add Black Beans

Drain and rinse black beans in a colander. (Rinsing canned beans removes as much as 40% of the added salt.) Add black beans to onion and garlic mixture and toss until headed. Reduce heat to low.

Step 5 – Add Sweet Potatoes and Prepare Tortillas

Once sweet potatoes are roasted, add them to the onion and black bean mixture and toss with 2 tbsp chopped cilantro.

There are several methods to heat tortillas:

  • Wrap in aluminum foil and steam in oven for 5 minutes.
  • Toast lightly in a toaster oven.
  • Lightly pan fry with cooking spray.

Step 6 – Serve and Enjoy

Spoon sweet potato and black bean mixture into tortillas. Garnish with avocado and remaining cilantro, and serve with lime.
